A can shoved up a chicken does almost nothing. A fine mist on the outside does almost everything. Here is the difference, and the science behind why.

Put a half-full can of beer inside a chicken, stand it upright over heat, and you have made the most photographed dish in American backyard cooking. You have also, according to every controlled test anyone has run, done almost nothing to the chicken.

This is not us being contrarian. It is basic thermodynamics, and once you understand why the can inside the bird fails, you understand exactly why misting the outside works.

The can inside the chicken never gets hot enough

For liquid in a can to steam your chicken, the liquid has to boil. Beer boils at roughly the same temperature as water, around 212F at sea level. Your chicken is done at 165F in the breast and comes off the grill somewhere around there.

The can is sitting in the middle of a mass of cold meat, shielded from direct heat by the bird itself. By the time the chicken hits temperature and comes off, the beer in that can has usually reached something like 150F to 170F. It never boils. It barely simmers. There is no steam bath happening inside your chicken, because the thing that would create the steam never got hot enough to make any.

Even if it did boil, the cavity is not sealed. Steam would take the shortest path out the neck opening and into the air, not sideways through the meat. Meat is not a sponge waiting to absorb moisture from the inside out.

The beer in the can never boils. So there is no steam. So there is nothing to absorb.

What actually dries out your meat

Moisture loss on the grill happens at the surface. Hot dry air moves across the outside of the meat, water evaporates off it, and that evaporation pulls more water up from underneath. Leave it long enough and you get the thing everyone is afraid of: a gray, tight, chalky exterior with a dry band an eighth of an inch deep.

The surface is where the problem is. The surface is also, conveniently, the only place you can actually reach while the meat is cooking.

What spritzing actually does, in four parts

It cools the surface through evaporation. A fine mist landing on hot meat evaporates almost immediately, and evaporation takes energy with it. That slightly cooler surface slows down the rate the meat loses its own moisture. You are not adding water to the meat, you are giving the dry air something else to take.

It makes smoke stick. This is the one most people underestimate. Smoke compounds adhere far better to a slightly tacky wet surface than a dry one. If you have ever wondered why your bark tastes thin despite four hours of clean smoke, the answer is often that the surface dried out early and stopped accepting anything.

It builds color. Anything with sugar in it, and that is most cans worth spraying, caramelizes on the surface across a long cook. Layer after thin layer, misted every forty five minutes, is how you get bark that looks like lacquer instead of dust.

It slows the stall, or extends it deliberately. When a big cut hits 150F to 165F and stops climbing, that is evaporative cooling in equilibrium with your heat source. Spritzing feeds that. Which sounds bad until you realize the stall is where connective tissue renders. A longer stall at temperature is often exactly what you want in a brisket.

The practical version

Spritzing is a surface treatment, not an injection. Everything good about it happens in the top few millimeters of the meat. That is not a limitation, because the top few millimeters are the part everybody actually tastes.

Why the delivery method matters more than the liquid

Here is the part that gets skipped. All four benefits above depend on the liquid arriving as a fine even mist. Dump a stream on it and you get the opposite of every one of them.

A splash puts standing liquid on the surface. Standing liquid does not evaporate quickly, it sits there and drops the surface temperature hard, which stalls the cook without any of the benefit. It washes rub off in visible streaks. It pools in the low spots and runs off the high ones, so your coverage is worse than doing nothing. And it uses six ounces to cover what a mist covers with half of one.

This is precisely the gap Snap Spritz was built to close. The trick was always right. Beer on meat is good. The method was the problem, and the method was a guy tipping a can sideways and hoping.

So should you still stand the chicken on a can?

If you like how it looks, sure. A vertical bird drains fat nicely and the can makes a decent stand. Just do not expect the beer to do anything, and do not skip seasoning the outside because you think the inside is handling flavor.

Better plan: season the bird properly, stand it up however you like, and mist the outside with the rest of that can every twenty minutes. Now the beer is doing something measurable, the skin is building color, and you are not relying on a physics claim that does not survive a thermometer.
